Philip Paden. MD is an Ophthalmologist who has become an outspoken advocate for the "China Diet" to improve hearth health and eye health and to lower cholesterol. He is Chief of Surgery at the Paden Eye Care Center in Medford, Oregon. .

Sharon Kleyne and Dr. Paden agree that there is virtually no eye care education in the United States today and that eye health is seriously threatened from many directions.
Dr. Paden noted that while the incidence of blindness in the US is lower than in Africa and Asia, it's not much lower. In Africa, blindness is usually related to sanitation and infection. In the United States, it is usually related to diseases of aging, and to systemic disorders such as glaucoma and macular degeneration.
Dr. Paden became concerned about the link between diet and eye health. He specializes in cataract surgery and eye damage from diabetes (macular degeneration), and he knew that diet definitely causes adult onset diabetes. At the time, all that was know about diet and vision was that dark green leafy vegetables, omega-3 fatty acids and carrots were good for vision.

The China Study describes a comprehensive rural health study in China, of the incidence and distribution of cancer. Researchers found huge differences between provinces, that correlated to the foods they ate. Areas with the lowest cancer rates ate the least meat.
In the United States, where diet tends to be much more uniform from region to region, the cancer rate varies much less and is high everywhere.
Prevent and Reverse Heart Disease describes a study and the Cleveland Clinic in which 18 patients with advanced, untreatable atherosclerosis (blocked arteries), were put on a vegan diet and 26 years later, 16 were still alive and the other two died from accidents. All have recorded a significant reduction in arterial blockage and arteriosclerosis.
The actual diet recommendation is "whole food from plants," commonly referred to as "vegan." In this diet, only plant products are eaten. Meat, fish and dairy are avoided. Also avoided are foods extracted from plant products, such as juice, Cheetos, manufactured cereal. Refined sugar is avoided and cooking oil is minimized.
Sharon noted that refined sugar, fats and salt can set up unhealthy food cravings. These same foods tend to be dehydrating.
According to Dr. Paden, the American diet is "awful." That's why we have high rates of heart disease, arteriosclerosis, cancer and diabetes, disease considered insignificant 100 years ago.
Sharon asked about buying local, in-season produce and Dr. Paden though this was a good idea. He did note that modern technology, with improved transportation and storage, enables us to eat nutritious foods such as lettuce, even when out of season locally. He considers this a benefit.
